Polish Cabbage Soup - recipe wanted!

Postby SuspendedAnimation » Tue Jul 28, 2009 7:51 am

Izzie, if you're out there and have a recipe to share or a direction you could point me, I'd be forever in your debt!

I was watching a show last night that had a brief glimpse of cabbage soup that reminded me of my childhood - red thin broth with cabbage - but I'm not having much luck finding a similar recipe. All the ones I find either don't have tomatoes or use meat (it's CABBAGE soup, people!)

Here's a rough approximation of the soup I remember (though we'd chop the cabbage into much smaller pieces): http://content5.videojug.com/50/50f73d3 ... e-soup.jpg

That's okay - thanks. I found a rough approximation of a recipe and I made some last night. It's not quite the same. I'm missing some dried herbs of some sort in there.

Why can't you eat cabbage? I can't imagine that cabbage has gluten in it. Or does it just give you really bad gas like it does for me? lol

i have issues digesting it.. bad pain..

as for the recipe... i dont really recall a cabbage soup.. i know of lots of other cabbage dishes.. but soup... no...

herbs are pretty simple in polish cooking.. bay leaves are in pretty much everything.. same with pepperscorns.. and salt.. yeah.. they're not the most exotic cooks over in poland.. i know that my mum always had dried thyme and basil on hand.. a bit of paprika too..

i think a lot flavour in dishes comes from smoked meat that is usually used in it.. my grandpa had his own smokehouse in the back yard!

so perhaps that is what you were missing.. smoked meat..

It's bad enough that Mr Spendy said it "smells like farts" and now you want me to add stinky dried mushrooms?! LOL

Yeah, I didn't season it AT ALL so it's really quite bland. I'll definitely throw in basil, thyme, salt, pepper & bay leaf next time. The soup from my childhood was meatless but dang, could Grandma ever make some TASTY keilbasa. They didn't smoke it but it was still dang good.

Potatoes might be good ... I was aiming for low calorie but taters could make it more filling. I wonder if it would be wrong to go with sweet potatoes.

are you sure it was meatless? usually stuff like that in soup is cut up really fine...

sweet potato? no..

you need to make a really good stock to get flavour... lots of vegetables (particularly root vegetables).. meat (chicken or a giant bone with meat on it).. spices..
